Veggie patches and Farmers Markets are excellent sources of summer and winter veg. Baby beets, snow peas, cucumbers, capsiscum, brussells sprouts, zucchini, cauliflower, and carrots all make beautiful pickles. Perfect for a summer anti-pasto platter, or inclusion in your winter soups and casseroles.
In this workshop, we will demonstrate how to make a simple pickling solution, the basic rules to ensure food safety, and how to experiment with spices to create a variety of different flavours. We will be working with abundant winter vegetables – beautiful baby beets for salads and hamburgers, and mixed seasonal veg to produce a variety of delicious mixed pickles for antipasto and platters. We will show you how to create a simple fridge pickle, how to safely do a ‘hot pack’ and how to use the Fowlers preserving system to create sealed jars that are shelf-stable.

How safe is preserving?
This food skill is more than 100 years old, and modern science has given us the benefit of understanding exactly how safe it is. Those Barossa Girls work within food safety guidelines set down by regulatory bodies, and we will not advocate or teach practices that are not proven. Fowlers Vacola bottling is a proven and safe method that relies on some very simple rules to eliminate the possibility of food spoilage or pathogens. It is important that home preservers understand the importance of safe food practices, and we will teach you how to apply those simple rules to your preserving.
