    Description

Sticky Situations – Bottle your own jams, sauces and chutneys.

Jams, sauces and chutneys are an essential part of any home stocked pantry, and they are an excellent way to use up excess fruit.  And seriously, once you’ve tasted homemade tomato sauce, or your own rich and dark plum jam, you will find it hard to go back to the processed varieties!

This workshop will step you through the basics of making jams, sauces and chutneys, the fundamental principle of introducing a preservative to your food product and what that means for its shelf life.  We will talk you through how to ensure your product is safe, how to get it to set, and what recipe ratios you can experiment with.  Finally, we will show you how to use your Fowlers processor to ensure its long term shelf stability.

This is a recorded copy of a live workshop we hosted online in 2021.  Participants had the opportunity at the conclusion of the workshop to ask questions.  If you have questions that were not answered please feel free to contact us – we are always available to help on your preserving journey.

    How safe is preserving?
This food skill is more than 100 years old, and modern science has given us the benefit of understanding exactly how safe it is.  Those Barossa Girls work within food safety guidelines set down by regulatory bodies, and we will not advocate or teach practices that are not proven.  Fowlers Vacola bottling is a proven and safe method that relies on some very simple rules to eliminate the possibility of food spoilage or pathogens.  It is important that home preservers understand the importance of safe food practices, and we will teach you how to apply those simple rules to your preserving.
